Shiso microgreens work best as a fresh finishing ingredient, adding color, texture, and a just-cut flavor that stands out right before serving.
1 cup sushi rice
1 1/4 cups water
4 sheets nori
1 ripe avocado, sliced
1 cup shiso microgreens
2 tablespoons soy sauce
1 teaspoon sesame seeds
Wasabi (optional)
Rinse the sushi rice in cold water until the water runs clear, then cook with 1 1/4 cups water in a rice cooker or pot until tender.
Once the rice is cooked, let it cool slightly before spreading it evenly onto the nori sheets, leaving a small border at the top.
Layer the avocado slices and shiso microgreens on top of the rice, then roll the nori tightly, sealing the edge with a little water.
Slice the sushi into bite-sized pieces and sprinkle with sesame seeds, serving with soy sauce and wasabi on the side.
